A simple & nutritious Mediterranean style meal, loaded with vegetables and colour. This recipe can be made to suit those with different dietary preferences, such as those following a vegetarian diet. Alternatively, this meal makes a great #meatlessmonday option.
Prep/ Cooking Time: Less than 20 minutes
120g shredded roast chicken breast OR
6-8 pre-made falafel balls (for a vegetarian alt.)
1 cup cooked basmati rice
2 cups rocket (1 small bag)
½ red onion
8 cherry tomatoes
¼ of a large cucumber.
¼ cup black olives (sliced)
Fresh/ Dried parsley
Jalapeños (if you like extra zing)
Homemade Tzatziki Sauce:
1 small zucchini (grated & strained).
1/3 cup greek style natural yoghurt
1/2 tsp garlic paste or crushed fresh garlic
Salt and pepper to season
- Once chopping up and preparing all of the above ingredients, place all ingredients into 2 x medium-sized dinner bowls.
- To make the sauce – combine the strained zucchini, greek style natural yoghurt, fresh garlic/ garlic paste, and salt/pepper into a small bowl, mixing until well combined.
- Drizzle the sauce over the top of the salad.
